Why did white people used to eat a lot of beans but not anymore?

Back in the 1700'-1800's white cowboys and thier familys would eat a lot of beans/cornbread/bbq ribs at home or around camp fires. They would eat regular beans/honey beans/canned beans etcetera but not anymore. Why do you think this is?

    Beans was an easy portable food that people could take with them on long drives (cattle drives) or journeys.  Some types of bread were also handy.  BBQ ribs, not so much though they might roast the meat of whatever they have caught locally.  Salted pork or beef jerky might be satisfactory options as well, but probably not as appealing in hot, dry areas.

    Today we have a lot more options of foods and ways to prepare them.

    I am White and I love dry beans. I can make a fantastic Red Beans and Rice dish

    and  large Lima Beans will melt in your mouth.  I always soak them overnight

    and throw away the water and rinse the beans real good. I use chicken broth

    for the liquid and a  ham hock the size of a softball.  I also cut up about 2 onions

    and add to the  crock pot.  Usually the gas is gone if you throw away the 

    soaking liquid.

    It's because you watch way too much TV.

    That's actually where Mel Brooks got his inspiration for the infamous farting scene in Blazing Saddles.  He noticed that in every western movie, cowboys all sat around a fire eating beans and guzzling coffee.  He figured he'd do a scene with what would really happen to anyone who lived on that diet.
