Why do fried chicken taste so different everywhere?

Some are good, some are avg, some are terrible.

      A lot of the reason is the oil it is fried in. Some people who fry chicken never change their oil, or don't use the proper oil--and it imparts about 80% of the taste of the chicken. Oil should be fresh, not rancid, and hot enough to crisp the outside while cooking the inside. After the oil, the seasoning used is the next flavor enhancer.

    It's actually a testament to how versatile chicken is. You can try to analyse it but there are just thousands of ways to cook a chicken.

    Frying chicken is something you do to it. It doesn't just exist like the wind. Some people brine it in salt water, just salt, buttermilk, pickle juice, lemon juice. Some people use flour, bread crumbs, batter with whole wheat flour, batter with white flour, batter with bread flour. Some add all kinds of spices, some don't. Some add baking soda, some add baking powder. Some pan fry in Canola oil, deep fry in peanut oil, some deep fry then bake in the oven. Some deep fry twice. Some put them under heat lamps. Some batter the night before, some use gluten free non GMO free range chickens. Some call ghetto chicken mean names just to make sure they had a bad life and got fat and weak for a tastier meat...

    Same reason that some Pot Roast meals are good, some are average, some are terrible. Same can be said for almost everything you make 

    Not all recipes are the same as a matter of fact it could come down to a particular ingredient.  Sourdough bread made in San Francisco tastes different than sourdough made in any other part of the country.

    Is the oil hot enough, how long is it cooked, how is the chicken seasoned, prepared and stored after it's cooked.
